Morning Glory Muffin Recipe
There is a still-functioning commune called “Morning Glory” near where I grew up in the hills of the Ottawa Valley. This recipe comes from a woman who still lives there today.
Ingredients
1 ½ cup flour (spelt is good or you can use an appropriate flour replacement)
2 tsp baking powder
½ tsp salt
½ cup raisins
½ cup coconut
3 eggs beaten
2 tsp vanilla
½ cup whole wheat flour
2 tsp cinnamon
2 cups grated carrots
1 Apple Grated
½ cup nuts of any kind
½ cup oil
½ cup sugar (optional)
¼ cup pumpkin seeds (optional)
½ cup sunflower seeds (optional)
¼ cup chocolate chips (optional)
¼ cup chocolate chips (optional)
Directions
- Mix the dry ingredients
- add carrots, coconut, raisins, apple, nuts
- beat eggs, oil and vanilla and add to the mixture
- Bake in 350F oven for 30-45 mins, until ready.
