
Chicken Bone Broth
It has come to my attention that the recipes we always share involve beef bones! But truly, is there anything more healing than soup made from chicken bone broth; chicken noodle soup, minestrone, lemon drop soup….. so many soul warming soups.
Here’s the good news, you can use allllll the stuff you usually throw away to bring rich flavour to your broth. So, before throwing anything in your green bin or composter, ask yourself, “Can I use this to flavour broth?”If so, toss it in a storage bag or sealable dish and place in your freezer! Some ideas are; onion ends and skin, celery ends, broccoli stalks, garlic ends and skin, herb branches, carrot tops.
Ok, onward to the recipe.
- chicken carcass
- 1 – 2 cups vegetable scraps (or 1 quartered onion, 2 stalks of celery, 2 carrots ends on, 4 sprigs of thyme, 3 cloves garlic)
- 1 tbsp peppercorn
- 2 tbsp apple cider vinegar
- salt and pepper
- enough cold filtered water to cover all.
Stock pot
- Place chicken then veggies and herbs in stock pot and cover with water.
- Bring to a boil
- Reduce to lowest setting
- Cover and simmer for no less than 5 hours
- Strain and store in fridge
Instant Pot (Favourite!!!!)
- Place all ingredients in the Instant Pot, and add water until it is about 2/3 full.
- Place the lid on, lock it, seal the vent.
- Use the manual setting to cook for 120 minutes.
- Let it pressure valve release naturally.
- Once released, remove the lid, and use a strainer to separate the liquids from the solids.
- Store in fridge; solids can still go in compost or green bin.
Crock Pot Slow Cooker
- Place all ingredients in a slow cooker, and fill with water.
- Cook on low for minimum 12 hours, up to 24 hours.
- Use a strainer to separate the liquids from the solids
- Store in fridge (or freezer); solids to compost or green bin.
*Tip – when rewarming, give a squeeze of lemon and simply sip from a mug for some cold-blasting goodness!
